This is a delicious and filling recipe.
I prefer to eat it warm, but you can eat it cold.
Ingredients
Salad
- 6 slices of bacon, chopped
- 2 chicken breasts, chopped
- Salt, pepper, parsley, thyme leaves
- 4 cups of shredded Brussel Sprouts (I use a food processor.)
- 4 cups of chopped kale
- 1/2 cup shredded parmesan (leave out if you are dairy free)
- 1/2 cup of silvered almonds
Maple Tahini Dressing
- 1/4 cup olive oil
- 2 Tbl tahini
- 2 Tbl maple syrup
- 1/2 tea salt
- 1/4 tea pepper
- Juice of one lemon
Instructions:
- Cook bacon, remove from pan.
- Add chicken and spices to the pan and cook. Remove from the pan.
- Add Brussel sprouts and kale and cook, stirring often, for 10 minutes until they are wilted.
- While they are cooking, prepare the dressing. Mix all the dressing ingredients together.
- Put the Brussel sprouts, kale, chicken, bacon, parmesan cheese, and almonds in a bowl.
- Toss with the dressing and serve.
