This is a delicious and filling recipe.

I prefer to eat it warm, but you can eat it cold.



  • 6 slices of bacon, chopped
  • 2 chicken breasts, chopped
  • Salt, pepper, parsley, thyme leaves
  • 4 cups of shredded Brussel Sprouts (I use a food processor.)
  • 4 cups of chopped kale
  • 1/2 cup shredded parmesan (leave out if you are dairy free)
  • 1/2 cup of silvered almonds

Maple Tahini Dressing

  • 1/4 cup olive oil
  • 2 Tbl tahini
  • 2 Tbl maple syrup
  • 1/2 tea salt
  • 1/4 tea pepper
  • Juice of one lemon


  1. Cook bacon, remove from pan.
  2. Add chicken and spices to the pan and cook. Remove from the pan.
  3. Add Brussel sprouts and kale and cook, stirring often, for 10 minutes until they are wilted.
  4. While they are cooking, prepare the dressing. Mix all the dressing ingredients together.
  5. Put the Brussel sprouts, kale, chicken, bacon, parmesan cheese, and almonds in a bowl.
  6. Toss with the dressing and serve.
