I adapted this recipe from Natural Grocers. You can see the original here.

There are no spices in the original so I added quite a few.

 Here is my version:

Ingredients

  • 5 or more strips of cooked bacon, cut into pieces
  • 1 lb of chicken – breast or thighs, chopped
  • 1 tea each of dried basil, thyme leaves, parsley, garlic powder
  • 1 medium yellow onion, chopped
  • 5 cloves of garlic, minced
  • 1 medium potato, diced
  • 32 ounces chicken broth
  • 1 bunch of kale, stem removed and chopped
  • 1/2 tea salt
  • 14.5 ounce can of diced tomatoes
  • 1/4 cup of heavy whipping cream or dairy alternative

Instructions

  1. Cook bacon and set aside.
  2. Add the chicken to the bacon grease, season with the spices, and cook.
  3. Remove the chicken and cook the onion, garlic, and potato for 5 minutes.
  4. Add the chicken broth, chicken, and bacon. 
  5. Bring to a light boil, reduce the heat and cook for 10 minutes.
  6. Add the kale, salt, and tomatoes and cook another 10 minutes.
  7. Remove from the heat and add the cream or dairy alternative.
