I adapted this recipe from Natural Grocers. You can see the original here.
There are no spices in the original so I added quite a few.
Here is my version:
Ingredients
- 5 or more strips of cooked bacon, cut into pieces
- 1 lb of chicken – breast or thighs, chopped
- 1 tea each of dried basil, thyme leaves, parsley, garlic powder
- 1 medium yellow onion, chopped
- 5 cloves of garlic, minced
- 1 medium potato, diced
- 32 ounces chicken broth
- 1 bunch of kale, stem removed and chopped
- 1/2 tea salt
- 14.5 ounce can of diced tomatoes
- 1/4 cup of heavy whipping cream or dairy alternative
Instructions
- Cook bacon and set aside.
- Add the chicken to the bacon grease, season with the spices, and cook.
- Remove the chicken and cook the onion, garlic, and potato for 5 minutes.
- Add the chicken broth, chicken, and bacon.
- Bring to a light boil, reduce the heat and cook for 10 minutes.
- Add the kale, salt, and tomatoes and cook another 10 minutes.
- Remove from the heat and add the cream or dairy alternative.
